Dinner was tortellini tonight! It had shallots, spinach, cherry tomatoes, garlic, lemon, and premade pesto sauce.

I finely chopped the shallots and garlic, halving the tomatoes. They were all put in at the same time and cooked on medium-high until tender. The lemon was squeezed over it. The tortellini was cooked in boiling water then drained. I added the pesto sauce and one cup of reserved pasta water to the pan with the prep and simmered for a few minutes until the sauce thickened slightly. The tortellini was added to the pan and mixed in then dinner was done! I sprinkled parmesan over top.

Overall the dinner turned out good! As it has cheese, it is not vegan, however I think there are some substitutions that could be made or fake versions of things like cheese. The spinach had a good contrast in texture to the rest of the dish and the lemon gave it a flavor boost, especially to the pesto sauce. Overall 10 outta 10!

This tortellini looks so yummy! It’s a great recipe because it is easy to make, doesn’t require much preparation, and you can make a big batch to last for a few meals. Are you a vegetarian? Because I love adding bacon to my tortellini pasta it really takes it to the next level, you should try it if you are able to.
