Tofu!!!

Tofu!!!

Today had no recipe and basically no plan. I had other obligations all day and had to work at night, but alas, it was my turn to cook. Not that I am complaining about that part, I love cooking and I enjoy my nights. No, I am complaining about the lack of preparation I gave myself, haha. I have cooked one other time with tofu and I was following a specific recipe with ACTUAL MEASUREMENTS! That’s not my style now lmao.

I do not have any prep pictures unfortunately, so this will be a lot of text. I made a game plan for my tofu which was cover them in lemon mayo, crust them in panko, and then fry them. This didn’t work out the way I planned unfortunately. Before starting on the tofu, I chopped up my broccoli and tossed with sesame oil, garlic powder, salt and pepper. Placing them on a parchment lined baking sheet, they went in the oven at 400 degrees for about 14 min. During this I cooked julienned carrots with minced basil, parsley, and cilantro until tender-crisp. Moving onto the tofu!

I chopped up my extra firm tofu into cubes and covered all of them in lemon-dill mayo. Then they were tossed in panko, which went well. Once I started trying to fry them over medium heat, it went wrong. They seemed to be cooking and I would shift the side once brown. Unfortunately, The mayo did not stick to the tofu well enough and the panko just slid right off and cooked in the pan alone. As this occurred, I made the decision to just continue cooking them and try to salvage it after. They fried until each side was golden brown and everything is served on a plate. I doused my tofu in soy sauce and sesame oil with salt and pepper.

Overall, This dinner was okay. It was rushed, but not bad. The carrots and broccoli was absolutely delicious with the seasonings. Unfortunately, I just couldn’t revive the tofu. It was bland, but ultimately I had food in my belly and went to work, ahah!
