Vegetarian Baked Pasta!

This week I made a lovely vegetarian pasta and it was the most delicious thing I think I have made sans meat. I started out by chopping up onions, garlic, parsley, spinach, and zucchini. I put my oven on to 425, then I boiled water and cooked my pasta. I tossed the zucchini in oil and a garlic-salt mix and set aside. Adding oil to my pan on medium-high heat, I put my garlic and onions on until fragrant. After, I added my zucchini and let it fry. Once cooked, I added my crushed tomato sauce and let the sauce thicken slightly. Finally, I added my pasta, half the parsley, and spinach to the pan and mixed it all together. That was able to sit for a couple minutes while I prepped my baking dish. I took a small amount of oil and greased the dish. Then I added my pasta mix and topped with mozzarella and some parmesan. I baked in the oven until the cheese melted and began turning golden-brown. I let it sit to cool a little and served in a bowl with more parmesan cheese and my parsley to garnish.

This was hands-down my favourite dish to make because it is relatively easy and quick, contains ingredients I usually have, and tasted delicious. It also makes amazing leftovers!!
